Litehouse Foods is a company my husband and I loved when we were first married. We thought their ranch was the ONLY store bought kind that was good. Coming from Utah where we grew up putting ranch on everything from hash browns and pizza to tacos and smeared on sandwiches, we consider ourselves ranch connoisseurs. Finding a good ranch is hard but finding a good gluten-free ranch is even harder. Thanks to the new Litehouse Foods OPA greek style ranch dressing, we have found a winner! Oh my goodness, it was so good! We went through the entire bottle in almost two days…oops! The flavor was spot on not being tart like most dressings or overly sweet. It had the creamy, smooth texture you love in a really good restaurant ranch. We just had to make our monthly taco dinner to add the dressing too. Growing up, my mom and siblings had tacos almost every single night the winter after her mom passed away since it was one of the only things the kids new how to make. Each of them carried their love for tacos into their future families by doing taco night weekly. Now my boys love tacos because I do them often just like Grandma Joyce used to for my mom when she was a little girl before she passed. I am going to share the secret to the best tacos ever below but having a good ranch dressing is a great start.
1 lb. of lean ground beef or chicken if you prefer, organic is best for both
1 T. cumin
1 tsp. each chili powder, Real Onion Salt, Real Garlic Salt and pepper
1/4 cup water
1/4 cup onion, chopped fine
Non-GMO corn tortillas (we like Food for Life) OR Brown rice tortillas
butter as needed for the tortillas

tacos toppings that you like: diced tomatoes, lettuce, cheese, olives, salsa and onion are great
In a frying pan, brown the meat until the pink is almost gone and break into smaller pieces. Add the water and seasonings and continue cooking until the meat gets a little bit crispy on the edges…yum! Transfer meat to a bowl and top with aluminum foil to keep warm. Spread butter on both sides of two corn tortillas, or three if you have a large frying pan, and cook on each side about a minute and a half or until they have nice color but aren’t crispy. Repeat until shells are cooked. Make sure to keep them in a tortilla warmer or on a plate covered with aluminum foil to keep warm while cooking the rest. Serve meat over warmed tortilla and top with your favorite taco toppings and cool, creamy ranch. Done…enjoy!!
In addition to the ranch, we loved the caesar dressing. My husband usually never touches caesar dressing and this, he ate. I decided to think a little outside the box and do something a bit different than just a caesar salad but didn’t quite know what to do when I came across a picture on Instagram from one of our favorite pizza places here in AZ, H&H City Pizza, who made a chicken caesar salad pizza for the special that day. It sounded fantastic! I put together my Pamela’s Products pizza crust and set out to recreate this delicious dish. I tell you what, it was absolutely delicious and only because of the robust flavors of the OPA caesar dressing. I loved how clean the ingredients were and that it wasn’t fishy at all. It had a creamy texture that dredged the crisp lettuce perfectly. Check out our recipe below…
Your favorite 12″ gluten-free pizza crust, prepared
1 cup mozzarella cheese, shredded
1/2 lb. chicken breast, grilled and shredded
1 cup yellow cherry tomatoes, sliced in half
3 cups romaine lettuce, torn into pieces
Parmesan cheese as needed
Preheat your oven to 400 degrees. In a bowl, toss the salad greens, tomatoes and dressing until well combined. Sprinkle the cheese and shredded chicken over your prepared pizza crust and bake for 5 minutes just to melt the cheese. Top with salad mixture and a sprinkling of parmesan cheese and enjoy.
Lastly, I fell in love with the new OPA feta dill dressing. I loved the familiar flavor of dill in this creamy, delicious dressing. I ate it on everything for a week until that sad day when it was gone. I made greek salads and even went out to buy gluten-free dolmas or stuffed grape leaves to dip in the dressing. It is such a flavorful dressing that it makes a complete lunch over some cucumbers. The little bites of feta cheese throughout make it a tasty sauce for rice or chicken and give the added benefit of additional protein. This became hummus’ best friend in my house!
In addition to fantastic dressings, Litehouse Foods has a great new line of freeze-dried seasonings that I just love. They make it so easy to cook dishes that with tickle your tastebuds and feel instantly fresh without actually having to have fresh herbs in your home. I thought the process of just adding a bit of water to bring them to life in my dishes was fantastic. We found that the Italian seasoning made our meatloaf so much more delicious than ever before and that the cilantro was perfect for tacos when I forgot to buy fresh bunches at the store. The basil was the perfect accompaniment to sliced tomatoes, mozzarella and drizzled olive oil. Each was delicious and truly made cooking more fun!
