As many of you know, I am a HUGE kombucha fan. I love the stuff!! I am especially fond of LIVE Soda Kombucha brand as it full of flavor and isn’t too overwhelming for kombucha newbies. You can read my full review HERE. I decided it would be fun to try cooking with this delicious elixir. Wow, using kombucha in our meat made it more tender and delicious than ever! I hope you enjoy this as much as we did.
1 (5-8 lbs.) Tip Roast, unthawed (grass-fed and organic is preferred)
1 bottle of Pure Doctor LIVE Soda Kombucha (If you don’t have this brand, you can use any kombucha you prefer, just be sure to add 1-3 drops of stevia if not using LIVE Soda brand)
1 tsp. Real Salt
Add your tip roast to the crockpot and season with salt. Pour the kombucha over the meat and cook on low 8-10 hrs. Reserve juices for gravy.
Kombucha Drippings Gravy
Reserved roast drippings
Gluten-free beef broth (enough to make 1 1/2 C. of drippings and broth)
Real Salt to taste
Take the remaining juices out of your roast about 10 min. prior to serving and add them to a saucepan with enough broth to equal 1 1/2 cups. Cook on medium heat until gently boiling. Meanwhile, combine 1/4 c. more gluten-free beef broth and 1 T. non-GMO cornstarch until well blended. Slowly add in the cornstarch mixture to boiling drippings and stir until it starts to thicken. Enjoy hot over your roast and mashed potatoes if you prefer.
