Paleo Chocolate Lover’s Cookbook Feature & Giveaway!!

IMG_1678Think Paleo means no sweets and all meats? Think again! Kelly from The Spunky Coconut shows just how delectable living a Paleo lifestyle can be. In the Paleo Chocolate Lover’s Cookbook she creates beautiful recipes with chocolate as the highlight while still staying true to the Paleo beliefs. I was so impressed! I did a segment on last minute Valentines Day ideas and just couldn’t resist featuring this tasty dish, Hazelnut Pancakes with Coconut Cream Chocolate Drizzle. I got festive and cooked them in the shape of hearts but you can do yours however you want. I always enjoy cooking with new ingredients so using Bob’s Red Mill Hazelnut flour was an exciting adventure but not too overwhelming thanks to Kelly’s easy-to-follow recipe. The chocolate sauce was so easy to make and was rich and delicious. In fact, we kept the leftover in the fridge to put on anything else we could think of after the pancakes were gone! 😉 Hint: It goes great on coconut milk ice cream…

As a huge white chocolate fan myself I got so excited to see the Mini Rose Water Pound Cakes with White Chocolate and White Chocolate Chai Cookies. These are just a few of the innovative recipes found in this fantastic book. Each page is dripping with chocolate goodness through beautiful photographs and fairly simple recipes that make anyone feel like a gourmet chef. In addition to beautiful sweet recipes, Kelly’s book also features some very fun savory dishes like Cocoa and Spice Rubbed Ribs and Chili and Roasted Butternut Squash.

I was really impressed with this cookbook and know you all will be too. Just seeing the forward by one of my favorite bloggers and chef’s, Elana Amsterdam, as she raved about Kelly and this cookbook got me excited to dive right in.
