We have personally enjoyed cooking with Jennie-O gluten-free products recently. We have made everything from meatloaf to Superbowl meatballs. We even served those meatballs (which we adapted a recipe from bakingmehungry.com) to friends during the big game and they loved them! I’ve included the recipe below so you can try it at home. The great thing about this ground turkey is that is is high in protein and low in fat making for a clean yet tasty dish when you are also trying to lose weight. Touchdown Turkey Meatballs
3 lb. Jennie-O lean ground turkey
3 slices of gluten-free bread, crumbled (We like Silver Hills Bakery)
1 onion, diced
1/2 c. parmesan cheese
2 tsp. Real Salt
1 tsp. black pepper
2 T. dried parsley
1 small jar of Crofters Four Fruit jam
3/4 bottle (24 oz.) organic, gluten-free ketchup (no high-fructose corn syrup added)
1/4 c. gluten-free barbecue sauce (again, no high-fructose corn syrup added)
Preheat the broiler. Combine all ingredients and shape into 2″ balls. Spray a baking sheet and place the turkey meatballs on close together. Preheat 10-12 minutes until cooked through and crisping up on the outside. In a crockpot, combine sauce ingredients. Once meatballs are finished, place them in a crockpot and heat sauce. Serve warm.
