I received this nice gift of 4 different types of jarred and packed in oil sun-dried tomatoes as well as 3 flavors of julienne cut sun-dried tomatoes in bags that are shelf stable. For my everyday clean eating menu I leaned towards the bags tomatoes as they felt lighter and more fresh. I loved tossing them into my morning omelet or adding it to our pasta dishes. In fact, we created this amazing dish using the Bella Sun Luci Italian Basil bagged sun-dried tomatoes as well as fresh tomatoes.
Easy Garden Pasta w/ Meat
1/4 C. Bella Sun Luci sun-dried tomatoes NOT packed in oil
2 C. halved cherry tomatoes
1/2 pound organic, lean ground beef
2 C. dry gluten-free pasta
5 fresh basil leaves, chopped
Real Salt to taste
In a pot, boil 8 C. water. Meanwhile, cook meat in a frying pan until cooked through and no longer pink. Add pasta to boiling water and cook until al dente. Drain and add pasta and remaining ingredients to the meat. Simmer on low 20-30 min. making sure to stir often. Enjoy hot with more fresh basil on top.
I found that the sun-dried tomatoes packed in oil were the most flavorful over our fish and chicken as well as chopped and added to salad. I thought the flavor was smooth and robust. I love that they are packed in extra virgin olive oil at the peak of freshness. The great thing about sun-dried tomatoes is that they have 12x’s the cancer fighting antioxidants, lycopene than fresh tomatoes.
