Spring time brings out the desire to add fresh, clean fragrances and tastes to the table but let’s face it, sometimes time is of the essence (haha, get it) and making a baked good from scratch can be tough. I know for myself, I like to do a lot of semi-homemade dishes and meals. (Thank you Sandra Lee for teaching us that this is ok!) These gluten-free, dairy-free muffins are semi-homemade but dressed up to fool anyone into thinking they were made from scratch. I began by putting together a ready made muffin mix from Glutino (but any gluten-free muffin mix will do) and added some of my favorite things. We have been doing less dairy and I had some Enjoy Life chocolate chip cookies on hand so I used those and coconut oil instead of butter. The result was fantastic! I wanted to open my Arizona windows (because it is 70 degrees here) and enjoy these muffins while also enjoying a nice breeze outside as they seemed like perfect companions. I hope you enjoy these as much as we did.
Orange Blossom Chocolate Chip Muffins
1 package (15 oz.) of gluten-free muffin mix, prepared (Again, we used coconut oil instead of butter.)
2/3 c. Enjoy Life chocolate chip minis
1-2 tsp. Orange Blossom water (If you prefer a heavier orange flavor, use 2 teaspoons. Otherwise, just use one.)
5 drops NuNaturals orange stevia
*Mix everything together with a spoon or spatula. Pour into greased muffin tins and bake according to the directions of the muffin package. Enjoy with fresh orange zest on top or as is.
