I have the greatest husband in the world so when I can do something special for him, I like too. He does so much for me every day that these little things are the least I can do to say thank you to him. You may remember that last year I made him Dr. Pepper cupcakes for his birthday. Well this year I decided to go with his second favorite drink and make Mountain Dew cupcakes. Since we only have gluten-free flour in our house and because I don’t want to bake with gluten in my kitchen, he got them gluten-free. But he wasn’t complaining. He said they were really good which of course made me very happy. I hope your loved ones enjoy these as much as my hubby did.
Gluten-Free Mountain Dew Cupcakes
1 c. coconut oil
1 1/2 c. sugar
3/4 c. Mountain Dew
2 T. lime juice
8 drops of NuNaturals Lemon Stevia
2 3/4 c. gluten-free all-purpose flour
1 1/2 tsp. baking powder
dash of Real Salt
*Combine wet ingredients until well blended. In a separate bowl, mix the dry ingredients together. Slowly add the dry ingredients to the wet while mixing. Continue mixing 2 minutes or until smooth. Bake at 350 degrees for 18 minutes. Cool then frost with easy Mountain Dew Frosting below.
Easy Mountain Dew Frosting
1 can of gluten-free vanilla frosting
1 c. Mountain Dew
Green food coloring
*On a stovetop, reduce the Mountain Dew over medium heat until a simple syrup forms and only about 4 T. remain. Add the Mountain Dew simple syrup to the can of frosting along with the amount of green food coloring you need to get the desired depth of green frosting you want. Mix well and use to frost cool cupcakes.
