Kelapo Coconut Oil Feature and GIVEAWAY!! PLUS Breakfast Peach Cobbler…

Oh how I love coconut oil!! It is my absolute favorite source of good fat. It is so versatile and can be used when making gluten-free baked goods or cooking fish and veggies with. I even have a jar in my bathroom cabinet! Kelapo coconut oil is a wonderful brand that offers high-quality, fair-trade, unrefined cold-pressed coconut oil. In addition to providing a great product, Kelapo is a wonderful company that gives back in many ways.

Beauty Uses: I use coconut oil to remove my eye makeup each evening. Once my face is washed and spritzed with toner, I then lather more coconut oil all over my face to sleep on. Good, cold-pressed, extra-virgin, organic coconut oil like Kelapo is naturally anti-bacterial and anti-fungal so it makes an amazing moisturizer. I have tried TONS of different bedtime routines for maintaining glowing skin and coconut oil has been the best one I have found yet. If you have dry skin it also makes a great body moisturizer just make sure to rub it in good so it doesn’t get your clothes greasy. In fact, I used coconut oil on my belly when I was pregnant with my two boys. It really helped keep my skin smooth and moisturized.

Kitchen/Cooking Uses: We actually love coconut oil so much in our house that we have filled out deep fryer with coconut oil for when we need our homemade deep fried gluten-free dishes like Josh’s Fried Chicken. Just make sure to keep it on a lower heat setting when using coconut oil. When in a hurry but I want a good mix of fat and starch, I will smear this Kelapo coconut oil on my gluten-free whole grain toast instead of using butter. I think the taste is great and it makes for a much more nutrient dense choice. Coconut oil can be used for sweets as well. I will throw it in to all of my baked goods recipes that call for oil and it tastes fantastic. The coconut flavor is mild so it doesn’t really effect the end product.

Recently I have been doing the Fast Metabolism Diet and LOVE it!! Phase 3 is about getting lots of healthy fats and coconut oil helps me do that. I created this awesome breakfast peach cobbler using Kelapo coconut oil that keeps me on point with my phase 3 food requirements. I love how healthy it is but it is also very delicious. It almost feels like I am cheating by eating dessert for breakfast. ;)

Breakfast Peach Cobbler (Gluten-Free)

1 1/2 C frozen organic peaches, sliced

3 T. Kelapo coconut oil

2/3 c. certified gluten-free oats

1 tsp. ground cinnamon

1/2 tsp. ground nutmeg

4-6 drops Sweet Leaf Stevia vanilla creme liquid stevia

Preheat oven to 350 degrees. In a bowl, combine 1 T. coconut oil, stevia, 1/2 tsp. cinnamon and peaches. Mix well then place in a small oven save baking dish. In another bowl, using your hands, crush the oats a bit until some are full and some have broken into multiple pieces. Add the remaining 2 T. coconut oil, 1/2 tsp. cinnamon and nutmeg to the oats and mix with your hands. Sprinkle oat mixture over the peaches and bake for 15 minutes or until peaches are soft and heated through.
