Oh. My. Goodness…I have found my pizza Heaven!!! H&H City Pizza located in Chandler, AZ is the pizza lovers dream and the includes those who live not just gluten-free but with celiac disease! Two valley chefs unite to create a family run pizza paradise that is not only full of delicious menu items but actually safe for those with celiac disease to dine on. Now THIS is my kind of restaurant. Before I even got to the restaurant, one of the owners Marshall, totally walked me through their processes of avoiding cross-contamination as well as what is used to prepare their gluten-free pizzas. I was impressed and looked forward to our dining experience. Once we arrived, we were greeted with warm smiles and Marshall who was excited to show me through the kitchen and talk to me in more detail about their facility. He also kindly invited my family and I to stretch and prepare our own gluten-free pizzas which my boys thought was a blast! Ok, I totally did too. 😉 I learned that at H&H City Pizza they take celiac disease and gluten sensitivity as well as other food allergies very seriously. Gluten-free crusts are prepared using a tasty recipe they have developed with a Bob’s Red Mill gluten-free all-purpose flour base. All of the Bob’s Red Mill gluten-free flour is kept in a separate bin with two other bins filled with sugar and cornmeal in between the other all-purpose flour. So you essentially have a good 5 ft. between the gluten-free flour bin and the regular flour bin. I love that!
When the gluten-free crusts are prepared, they are done so on a dedicated gluten-free station where no flour is put ever. They are also prepped at a separate time. They are then individually wrapped and stored in the top of the walk-in fridge on their own tray. When a gluten-free pizza is ordered, they pull one out and unwrap it on that same gluten-free prep station then add the toppings that haven’t been contaminated. There is a clean, separate pizza sauce ladle for smearing the sauce, which is prepped into individual lidded cups for easy use. A clean, separate pizza cutter is also used. When the pizza is cooked in the pecan wood fired oven at 800 degrees, it is done on a dedicated gluten-free thick, metal pan as to avoid cross-contamination.
I was SO impressed with the procedures used to ensure mine and others safety when dining gluten-free at H&H City Pizza. The pizza was the absolute BEST I have ever enjoyed since being diagnosed with celiac disease. My husband (who you all know by now is very picky, especially about pizza) agreed that it was the best gluten-free pizza we’ve ever had. The crust was crispy yet hearty and the toppings were fresh and flavorful. The sauce was rich and delicious including the bbq sauce that was used to make the barbecue chicken pizza. I couldn’t say enough good things about this restaurant. I would highly recommend it to anyone! Next time you stop in, be sure to tell Hailey and Marshall hi and that Chandice sent you. Bon Appetit!
