Kyra’s Bakeshop is a phenomenal bakery located in Lake Oswego, OR. Kyra Bussanich, the Founder, is a 3x Food Network Cupcake Wars Champion! She is very talented in creating amazing desserts that are 100% gluten-free made in a dedicated facility. These treats are unlike any others. They are decadent and delicious to the gluten-free lover and those who don’t have to live without gluten. Everyday Kyra creates an amazing menu like the one feature below, to wow her local guests with. But don’t worry, she now ships her tasty treats nationwide as well!!
Menu for Monday December 16th-
Cinnamon Rolls, Gingerbread Scones, Maple Pecan Scones, DF Orange Cardamom Walnut Biscotti, Brown Butter Chocolate Chip Cookies, Focaccia by the slice. The cupcakes will be B&W, DF Hot Chocolate, Birthday Cake, Chocolate Classic, Skinny Vanilla Latte and Tuxedo! Make sure you come in and pick up some delicious treats to start your week off right!
In addition to her lovely bakery, Kyra has a line of cupcake mixes that will knock your socks off! Make cupcakes like a pro without all the fuss using these easy to follow mixes. The thing I loved most about them was that they were made from real ingredients. I didn’t have to guess what something was listed on the back. That is what Kyra believes in, using real ingredients to make really tasty food.
Recently, Kyra released her first cookbook, Sweet Cravings: 50 Seductive Desserts for a Gluten-Free Lifestyle and boy was it great! It was filled to the brim with mouthwatering desserts that would make even the most timid of bakers excited to get in the kitchen and give gluten-free baking a try. The photos couldn’t be more beautiful (don’t be surprised if you want to lick a page or two ;)) and the recipes are both inventive and exciting. My friend Erin’s birthday was coming up so I decided to wow my friends with Kyra’s Champagne Cupcakes from the book. I have always been a fan of the idea of strawberries and champagne since I was a teenager and loved Victoria Secrets signature blend lotion so I decided to tweak the recipe just a bit to add the touch of fruit. Now, I am NOT a baker (I absolutely love to cook) so this was a big deal for me to make a baked good from scratch (I’m a mix kind of girl). Of course, this recipe was also a more advanced one but I was determined. I was very surprised to find that I didn’t feel overwhelmed by the recipe at all! It was easy to follow and smelled delicious which kept me baking happily. I don’t drink so I found a non-alcoholic Brut that went very well with this recipe. Once everything was mixed, I took a little taste just to make sure all was ok. I kid you not, I grabbed a spoon and ate an entire spoonful of raw batter right then and there after that first lick because it was THAT good! Once baked, (with a little help from my awesome baker friend Brigette) we piped some delicious non-alcoholic champagne frosting on top and served with a fresh strawberry and some gold disco dust. They looked amazing and I attribute it all to Kyra’s rockin’ book!! My friends were ooing and ahhing when they bit into each cupcake. They said, “These are gluten-free?!” and “They are SO moist!”. I was so proud to show my friends just how fabulous gluten-free can be. Thanks Kyra!!
