What are two things you think of (next to turkey) that say Thanksgiving? Stuffing and Pie right? Well for those of us living gluten-free, regular stuffing and pie are not options. Well no need to worry, Glutino has got us covered! Just like with their cookies, crackers and bars they won’t be short of flavor or presentation either. We have come to trust the family of Glutino products and their new cornbread stuffing and pie crust are just two more reasons why.
Glutino acquired Gluten Free Pantry brand a few years back. Their pie crust, which is now Glutino branded and owned, is my absolute FAVORITE pie crust mix. I can’t even begin to tell you how flaky, buttery and rich this crust is. It is one where you can use the leftovers cut off the pie to make cinnamon sugar bites like we used to as kids, that is how good it is! My mom and I have come up with recipes for most of our favorite foods but when we talked about a pie crust, we were both in agreement that this mix was so good that we really felt no reason to worry about creating a new recipe. My mom and I make 8-10 gluten-free pies every Thanksgiving and this is the only crust we use. From cream to fruit it makes the perfect base! My non gluten-free hubby says my banana cream pie using this crust is his favorite dessert. Since Marie Calendars Razzleberry Pie (NOT gluten-free) used to be his favorite, my awesome mom came up with this gluten-free version so we could all enjoy it. CHANDICE’S NOTE: Use all butter, no shortening when preparing your Glutino pie crust.

Glutino’s stuffing is a great tasting alternative to the gluten containing ones we can no longer eat. Slightly seasoned and with cubes not too big, it makes for a versatile option for many different dishes including the Thanksgiving Meatloaf recipe below that I created. I also enjoy using it to stuff poultry or squash, add it to a hash instead of using potatoes or make little stuffing pancakes out of it and top with cranberry sauce.
1 lb. ground meat (I very much dislike ground turkey so I used beef but you can use whatever you prefer as I am sure turkey would give more Thanksgiving flavor)
1 c. Glutino cornbread stuffing (dry or day old if you are using leftovers)
1 tsp Real Garlic Salt
1 tsp. Real Onion Salt
1 tsp. Sage
2 c. prepared mashed potatoes to your liking
2 c. gluten free beef broth
1/4. c. cornstarch
1/2 tsp. Real Salt
1/2 tsp. Real Onion Salt
1/4 tsp. Real Garlic Salt
1/2 tsp. black pepper
1 tsp. chopped parsley
*Heat all but 1/2 cup of broth in a saucepan until boiling. Combine remaining 1/2 cup of broth and cornstarch together and slowly temper into hot broth. Season with salts, pepper and parsley. Enjoy hot.
*Preheat the oven to 350 degrees. Combine all ingredients but potatoes and press into a greased loaf pan making a well with a 1/2 inch layer of meat on the bottom and sides. Fill well with mashed potatoes and bake 45 min-1 hr. or until meat is cooked through. Top with beef gravy and enjoy!
