I am loving this awesome new cookbook, Delightfully Free by Tracy Hill. It is full of delicious recipes that are free of gluten, dairy and refined sugar. I had the pleasure of meeting Tracy at the Celiac Disease Foundation National Conference in May and what a pleasure it was! We ended up talking for nearly an hour about all that she is doing and our passions and dreams for the future. I was able to learn just how much healthy living and especially clean eating mean to her. Tracy is a cookbook author with true passion. You can hear it in her voice when she gets excited telling you about her awesome three layer chocolate cake with a can of black beans in each layer.
Her recipes are innovative and full of nutrient dense ingredients. I love that they aren’t overly hard to prepare either. The book itself is gorgeous with a hard cover and spiral binding which makes it easy to lay the pages down flat for viewing while making the recipes. The pages are glossy and really beautiful with full color photos. I really enjoy the extra information contained in this book as well as Tracy’s personality coming through on each page.
One of the recipes I made was the delicious Pasta Carbonara with turkey bacon and coconut milk. I purposefully made it for my in-laws and family so that I could get an honest opinion on it. They are really liked it! I did as well. It was full of flavor and hearty enough to stand alone as a dinner. I served it along side cantaloupe which made for a fresh, sweet dessert to this enjoyable dinner.
