Spicy Spinach Salsa Chicken:

 

 

Ingredients:

 

3 Chicken Breasts

 

Black Pepper

 

Spicy Fresh Salsa

 

2 cups spinach

 

3 slices Cheddar Cheese

 

 

 

Directions:

 

The chicken is super easy! Season chicken breasts with black pepper and place in a slightly oiled frying pan. Once the chicken is almost cooked through (6-7 minutes on each side) smothered it with spicy fresh salsa, then spinach leaves, and a thin slice of mild cheddar cheese. Covered the pan to let the final minutes of magic happen. ;)

 

 

 

Baked Zucchini Fries:

 

 

Ingredients:

 

3 medium zucchini

 

2 eggs

 

Your favorite Gluten Free Bread Crumbs or crackers

 

½ cup Parmesan or mozzarella cheese

 

Black Pepper

 

Paprika

 

Real Onion Salt

 

Real Garlic Salt

 

 

 

Directions:

Preheatoven to 350 degrees. Using 3 medium sized zucchini, cut them to the desired size about (1/4” thick. ) Make an egg wash bath using two eggs in a bowl. For the coating the sky is the limit! You can use GFree bread crumbs and whatever seasoning you like. If using gluten free crackers, take half of a package and pulse them in a food processor. Add in black pepper, paprika, onion salt and garlic salt and a little mozzarella cheese. Once it’s all mixed together, just dip the sticks in the egg wash and then in the mixture. Place on a foiled well coated (gluten free cooking spray) baking sheet, sprinkle some mozzarella on the sticks and place in the oven for 20-30 minutes or until golden brown. Enjoy!
