Gluten Free Oatmeal-Banana High Protein Muffins

IMG_4070 IMG_4071BiPro has been our protein of choice while doing Body Beast gluten free. It tastes great and is so versatile it can be used in almost anything. Take these delicious gluten free muffins for example. A scoop of BiPro protein powder takes these muffins to the next level by making them high protein. We of course used our favorite gluten free oats, Gluten Free Prairie in this recipe as well. They have proven to be the safest and most digestible gluten free oats we have found. Enjoy!

Gluten Free Oatmeal-Banana High Protein Muffins

2 1/2 c. gluten free oats (we prefer Gluten Free Prairie)

1 c. plain, gluten free yogurt

2 eggs

3 very ripe bananas

1 scoop of gluten free, unsweetened protein powder (we prefer BiPro)

1/2 c. good quality agave or 1 Tbs. stevia (we prefer Sweet Leaf brand)

1 1/2 tsp baking powder (aluminum-free)

1/2 tsp baking soda

*Preheat the oven to 400 degrees. Combine all ingredients except the oats in a blender or food processer. Adding one cup of oats at a time, mix until oats are blended. Spray a muffin tin with non-stick, gluten free cooking spray and fill each 3/4 full. Bake 20-25 minutes or until a toothpick inserted in the middle comes out clean. These are great topped with PB or almond butter and jam.
