Dr. Pepper Cupcakes with Dr. Pepper Frosting for my favorite guys birthday!!

I have the most Amazing husband who is my biggest fan so I racked my brain of something special I could do for him for his birthday this year. I found this idea in the form of a picture on none other than Pinterest and decided to bring it to life in a gluten-free way since those are the only cake mixes I keep in my house. ;) These cupcakes turned out fabulous!! The flavor was perfect, they were moist and delicious!! Everyone at his work Lontanda no one even knew they were gluten-free. I told him to tell them after they all told him how good they were. ;)

Dr. Pepper Cupcakes

1 gluten free chocolate cake mix (I used Bob’s Red Mill)

3 eggs

1 c Dr. Pepper

1/2 c melted butter

*Mix all ingredients a pour into cupcake pan. Bake at 350 degree for 12-15 min. Once cooled, frost with Dr. Pepper frosting below and set in soda can that the top has been cut off. Please note the tops of the cans are VERY sharp!!

Dr.Pepper Frosting

1/3 cup of Dr. Pepper

1/2 c butter

6 tbls of cocoa

1.5 lbs powdered sugar

* Bring everything but the powdered sugar to a boil. Pour the hot mixture over the powdered sugar and mix well. Add Dr Pepper to thin frosting as needed.

Chocolate Truffle Balls

2 bars of semi-sweet baking chocolate

1 (8oz.) package of cream cheese

* Beat cream cheese until smooth and soft in one bowl. In a small saucepan melt the chocolate slowly. Combine chocolate and cream cheese and  mix well. Refrigerate until firm the remove and shape into balls.

    These sound delicious but my biggest question is can you actually taste the dr pepper. I have searched for a recipe that actually has at least somewhat of a dr pepper flavor and no luck :(

      You totally can!! I actually took these to my husband (non GF) at this work to surprise him and his co-workers on his birthday and they were all raving about them!! I was impressed at how Dr. Peppery ;) they tasted!
