2 eggs
1- 1 1/2 c. gluten free panko bread crumbs (Kinnikinnick's are the BEST)
1 c. cornstarch
1 - pound cod fillets, or any other white fish you prefer, cut into sticks
1 tsp. Real Salt
1/2 tsp. black pepper
In a pie dish, whisk eggs and set aside. Place cornstarch and gluten free panko breadcrumbs in two separate dipping dishes. Dredge fish sticks in cornstarch, then egg and finally in the gluten free panko breadcrumbs making sure to press lightly to make sure they stick. Fry fish sticks in deep fryer filled with good quality oil. Fry until browned and fish is white and no longer transparent when broken in half.
