Ok the buttermilk syrup part of this recipe is definitely not the healthiest but it is EVERYONE’S favorite and the healthy oatmeal pancake part makes up for it! I get requests for this recipe all the time, and mostly from people who don’t even have a gluten allergy. I do have to give credit to the Allen family for the buttermilk syrup recipe and the Malaela family for the oatmeal pancake recipe. We loved both so combined them. Enjoy!
2 c. gluten-free oats
2 c. organic or raw buttermilk
2 cage free, organic eggs
1/4 c. butter
2 Tbls. raw sugar or agave
1 tsp. baking powder
1 tsp. aluminum-free baking soda
1 Tbls. cinnamon
1/2 tsp. salt
* Mix oats and buttermilk and refrigerate over night or at least 2 hrs. The following morning add the rest of the ingredients and fry in greased pan.
1 cube butter
3/4 c. raw sugar or agave
1/2 c. organic or raw buttermilk
1 tsp. gluten-free vanilla
1 tsp. aluminum free baking soda
*Bring first 3 ingredients to a boil. Remove from heat and add vanilla and baking soda. Serve hot over oatmeal pancakes.
**KEEP IN MIND THAT MANY PEOPLE WITH CELIAC DISEASE ARE ALSO NOT ABLE TO TOLERATE OATS. THE BEST THING TO DO IS TO GET TRULY “PURE” OATS OR ONES THAT ARE KNOW TO HAVE NO CROSS CONTAMINATION OF WHEAT, BARLEY OR RYE, AS THIS IS THE MAJOR PROBLEM MANY PEOPLE WITH CELIAC CANNOT TOLERATE OATS. www.celiac.com has great articles on this topic.
