These cookies are SOOO good! My mom makes such yummy sweets and this one certainly delivers. I love that it is raw and easy…perfect for the hot house from all the holiday baking. Thanks mom, this recipe is just excellent!
1 package shredded coconut (NOT dehydrated)
2 c. raw almonds (chopped)
1 tsp. gluten-free vanilla
1 c. pure maple syrup
2/3 c. unrefined coconut oil
1/2 tsp Real Salt
*Mix ingredients together in a large bowl. Use a small cookie scoop to form into balls. Place on a baking sheet with wax paper and chill 1 hr. or more.
