My amazing interview with Author, Anne Byrn of The Cake Mix Doctor Bakes Gluten Free

Chandice: What’s your favorite recipe in the book and why?
Anne: Kitchen Sink Gingerbread and it’s unexpected taste. You can hardly believe it was started from a yellow cake mix. It’s earthly and flavorful and is great with lemon curd or powdered sugar. It creates an open door to creating cookies because of the rice flour. It is a yummy batter that can be made into the gingersnap and gingerbread men cookies.

Chandice: Are specific recipes based on someone you’ve known or events in your own life?
Anne: There are 10 Cake Mix Doctor legacies in this book. Some include Susan’s Lemon, Holy cow, Darn Good Chocolate, Honey Bun, Strawberry and Banana w/ caramel. I wanted to welcome the gluten free readers with these recipes especially.

Chandice: Anything about your childhood or upbringing help you in writing this book?
Anne: I’m not gluten free but I am the cake mix doctor which helped. Also, there are great bakers in my family including Bebe who always made delicious frostings from scratch. Some of those recipes are included in this book.

Chandice: What was your greatest challenge in writing this book?
Anne: I found that gluten free mixes had more flavor. It was refreshing to not have un-natural flavors added to the mixes. They were a bit more gritty because of the rice flour so adding orange juice, especially to the yellow cake mix gave better texture, color and flavor.

Chandice: What gluten free products, or resources have influenced you most in this book?
Anne: Gluten free cooks were my greatest resource. All those local ones like Cinde Shields and Hartley Steiner who were willing to test recipes. Also, my subscription to GF Living Magazine, reading other gluten free blogs and The Kennedy Center for autistic children. I was sad feeling like many kids out there were missing out on fun cakes for birthdays or otherwise. I wanted to create a happy book that included pretty pictures that a child could point to and say, “I want that cake for my birthday!” Some of the gluten free products that I found most helpful were GF Pantry and the Betty Crocker mixes.

Chandice: If you had to do it all over again, would you change anything in this book?
Anne: I guess I would consider including the “trashy cake” 🙂 that so many people love, red velvet cake. I didn’t include it because I didn’t feel it appropriate with all the red dye 40. I would also try to do more egg free and vegan recipes.

Chandice: Did you learn anything new while writing this book?
Anne: Mixes make fabulous cookies! Ah-ha moment with rice flour. I learned more about the gluten free community and what they deal with on a day to day basis.

Chandice: Tell us your latest news. Any plans for more gluten free books?
Anne: I am currently working on a dinner book that is not neccesarily gluten free but more about back to the basics for dinners. Not Julia Childs basics but basics like grilling.

Chandice: Do you have anything specific you would like to say to your readers?
Anne: I hope you enjoy the recipes. I would love to see my readers reactions, suggestions and how you have doctored a cake mix using my website and Facebook page.

I was so lucky to have met her while she was here in Arizona for a book signing (I even got mine signed! 🙂 Anne’s book is a wonderful idea for a gluten free gift for any occasion. There are gorgeous pictures in the book so you or your little one can do exactly what Anne wanted you to do and point to a picture and say, “I want that one!” What a wonderful gift we have all been given with the writing of this book.     Hi. Julie Dobson here a facebook fan and follower. Our first recipe was orange cake. But being a chocolate lover like the idea of trying chocolate chop gooey butter cake.
