Mom’s Famous Peaches & Cream Cobbler

My mom used to make this delicious cobbler which she adapted from the Land of Lakes Cookbook. It’s amazing!!! 

Filling

1 c. raw or organic sugar
2 cage-free, organic eggs slightly beaten
2 Tbls. gluten free flour (I use Pamela’s Baking Pancake Mix.)
1/2 tsp. fresh ground nutmeg
4 to 6 medium (4 cups) peaches, peeled, sliced OR 2 (16-ounce) pkgs. sliced frozen peaches

Cobbler

1 1/2 c. gluten-free flour (I use Pamela’s Baking Pancake Mix.)
5 Tbls. sugar
1 tsp. aluminum-free baking powder
1/2 tsp. Real Salt
1/3 c. raw or organic butter, softened
1 cage-free, organic egg slightly beaten
3 Tbls. raw or organic milk
Heat oven to 400°F. Stir together all filling ingredients except peaches in large bowl mix well then stir in peaches. Pour into 13×9-inch baking pan.

Mix flour, 2 Tbls. sugar, baking powder and salt in medium bowl; cut in butter until mixture resembles coarse crumbs. Stir in egg and milk just until moistened. Crumble mixture over peaches and sprinkle with remaining sugar.

Bake for 40-45 minutes or until golden brown and bubbly around edges. Serve with cold vanilla ice cream and enjoy!
