Belgian Waffles with Homemade Whipped Cream & Berries


Belgian Waffles

2 large free-range, organic eggs, separated
1-1/2 c. Pamela’s Baking & Pancake Mix
3/4 c. milk
2 Tbls. coconut oil


Whip egg whites until stiff. In another bowl mix Pamela’s Baking & Pancake Mix, egg yolks, water, and coconut oil together until there are no lumps. Fold in stiff egg whites and cook in preheated, greased Belgian waffle iron.

Whip Cream

1/2 pint of organic heavy cream
organic confectioners sugar to taste (about 1/4 c.)
