Herbed Parmesan Crusted Fish

2 fillets of either Halibut or Mahi Mahi
1-2 Tbls. coconut oil
2 eggs, mixed
1/2 c. Parmesan cheese
a few sprigs of fresh Thyme
a few fresh Basil leaves
dash of Real Salt
dash of black pepper

*While heating coconut oil in frying pan, combine Parmesan cheese, herbs, salt and pepper on a plate. Dip fish fillets in egg, then in Parmesan mixture. Gently lay in hot oil and cook about 3-4 minutes per side or until fish is white all the way through and begins to flake. Enjoy next to a fresh summer salad of arugula and veggies.
