English Muffin Breakfast Sandwich

1 Food for Life Gluten-free English Muffin
2 free-range, organic eggs
1 tsp. raw or organic butter
1 slice organic pepperjack cheese
1/2 Tbls (or more if you like 🙂 Veganaise
1/2 tsp. yellow mustard
Real Salt and Black pepper to taste

*Melt butter in a frying pan. When hot, add the eggs and fry to your liking. While eggs are frying, split and toast english muffin making sure not to over toast. Let cool a minute then spread Veganaise and mustard on the muffin, then layer egg, cheese and egg. Eat hot and enjoy!
