Eclipse Trailer and Themed Treat :)



FINALLY here!!!! The Eclipse trailer is finally here and it is amazing!!! If you don’t know this about me, you do now…I am a die hard fan of the Twilight saga books AND movies. Love it!

And in honor of my LOVE for this series…a heart shaped Torte Di Meliga. A tasty cornmeal cake from none other than Italy :) Enjoy!!!

Torte Di Meliga

3/4 c. blanched almond flour
1 c. yellow cornmeal
1/4 c. gluten-free flour blend (Pamela’s, Namaste, any will do)
1/2 c. raw sugar
1/2 c. raw or organic butter
pinch of Real Salt
powdered sugar for dusting

*Preheat oven to 400 degrees. Combine all ingredients in a food processor and grind 1 minute. Grease an 8×8 inch cake pan very well with butter. Spread cake dough into pan evenly. Bake 25-30 minutes or until golden brown on top. Let cool then dust with powdered sugar. This is a more course crumbly type tea cake. It is lightly sweetened but very delicious!
