Bacon, Mozzerella and Chive Quiche

When trying to decide on a delicious meal I could make with only the few ingredients I had on hand that day, I came up with this very yummy dish! Enjoy!

1 pie gluten-free pastry shell (I like Gluten Free Pantry)
1/2 c.-3/4 c. nitrate-free bacon, chopped
1/2 c. mozzarella cheese, grated
1 1/2 c. organic or raw milk
3 free-range, organic eggs
1 Tbls. chives
1/2 tsp. Real Salt
1/2 tsp. Real Onion Salt
1/2 tsp. black pepper

Follow the directions on the pie crust box to make (1) one pie crust. Bake about 8 minutes on 425 degrees to start the cooking process BEFORE filling with other ingredients. After crust has been baked 8 minutes, sprinkle bacon in the bottom of the pie crust. Combine all remaining ingredients, EXCEPT chives, in another bowl and pour over bacon. Sprinkle chives over the top and bake at 325 degrees for about 45 minutes or until knife inserted in center comes out clean. Let sit just a minute before slicing.
