The Bird

My mom makes the yummiest, most juicy roasted chickens for Sunday dinners. Now that I am a mama I am trying to cook more like the greatest cook I know, my mom. You guys are going to love this!

Roasted Chicken with Homemade Gravy

1 Free-range, organic whole chicken
1 Tbls. coconut oil
1/2 tsp. Real Salt
1/2 tsp. Real Onion Salt
1/2 tsp. Real Garlic Salt
1/2 tsp. Real Seasoned Salt
1/2 tsp. paprika
1/2 tsp. cayenne
1 Tbls. thyme, rosemary, or any other spice you like

*Combine salts and seasonings. Spread coconut oil all over the bird. Massage spices and salts into the bird. Bake at 300 degrees for about 2 1/2 to 3 hrs. Enjoy!

For homemade gravy:
Take drippings from chicken and drain out the extra pieces/chunks of chicken you don’t want. Put on a stovetop with hot water (about 1 1/2 c. total) take a little bit of mixture out and combine it well with 1 Tbls. cornstarch then slowly whisk it into the rest of the liquid over medium heat. Add 1 tsp. Real Salt and a dash of black pepper. Mix until it thickens and boils. If needed, add more cornstarch so it is the thickness of gravy. This is awesome!
