WIN PAMELA’S BAKING MIX- ONE DAY ONLY!!! White Chocolate Macadamia Nut Cookies~25 Days of Christmas Cookies #17

These gluten-free chewy, white chocolate macadamia nut cookies are divine! Ok, so let’s just say it up front…we all know white chocolate isn’t really chocolate at all. It isn’t necessarily great for you either. With that being said, it is the holidays and I wanted to make this cookie. If you are offended, I apologize. This recipe is for all those who believe, like me, that once a year a little white chocolate won’t kill you. On that note, enjoy! 😉

1/2 c. raw or organic butter
1/2 c. organic brown sugar
1 Tbls. agave
1 free-range, organic egg
1/4 tsp. gluten-free almond extract
1/2 tsp. gluten-free vanilla extract
1 1/4 c. Pamela’s Baking & Pancake Mix
Dash of Real Salt
1/2 c. macadamia nuts, chopped to your liking
1/2 c. white chocolate chips

*Preheat oven to 350 degrees. Cream butter, brown sugar, and agave in a large bowl. Add the egg and extracts. Add gluten-free flour blend and Real Salt. Mix until dough is forming. Stir in nuts and white chocolate. Bake 12 minutes or until just cooked through (a little uncooked in the center is yummy) and golden brown.

**If using another gluten-free flour blend, add 1/2 tsp. each aluminum-free baking soda and xanthan gum. Pamela’s Baking Mix already has these two things added, I love it!

  1. How did you know I just realized this afternoon I'm running low on Baking Mix??? That stuff is incredible, isn't it? 🙂
    I was a little disappointed when the cookie corner only had ideas on how to decorate the pre-made cookies, but I'm still planning on trying the lemon frosting idea with the bag of Simplebites Ginger Snapz I picked up last week!

We've been baking fiends for the last couple of weeks, so we already have cookies baked and frozen … so maybe I can use the orange frosting on those wonderful chocolate cookies we were going to make 'sandwiches' out of, anyway! What a yummy thought! Though, the dark and white chocolate sounds terrific, too!

  9. I like the idea of using white and dark chocolate to dip the cookies – I am thinking that I would try it out on mini bite brownies – maybe even add some crushed peppermints, and drizzle some other melted colors of chocolate too!

  10. I am a little disappointed that Pamela's cookie corner is just decorating ideas for their cookies, but I think I will try the Peppermint bits on their chocolate cookies. Pamela's is by far the best mixes I have found! Love, love them!
