These gluten-free chewy, white chocolate macadamia nut cookies are divine! Ok, so let’s just say it up front…we all know white chocolate isn’t really chocolate at all. It isn’t necessarily great for you either. With that being said, it is the holidays and I wanted to make this cookie. If you are offended, I apologize. This recipe is for all those who believe, like me, that once a year a little white chocolate won’t kill you. On that note, enjoy! 😉
1/2 c. raw or organic butter
1/2 c. organic brown sugar
1 Tbls. agave
1 free-range, organic egg
1/4 tsp. gluten-free almond extract
1/2 tsp. gluten-free vanilla extract
1 1/4 c. Pamela’s Baking & Pancake Mix
Dash of Real Salt
1/2 c. macadamia nuts, chopped to your liking
1/2 c. white chocolate chips
*Preheat oven to 350 degrees. Cream butter, brown sugar, and agave in a large bowl. Add the egg and extracts. Add gluten-free flour blend and Real Salt. Mix until dough is forming. Stir in nuts and white chocolate. Bake 12 minutes or until just cooked through (a little uncooked in the center is yummy) and golden brown.
**If using another gluten-free flour blend, add 1/2 tsp. each aluminum-free baking soda and xanthan gum. Pamela’s Baking Mix already has these two things added, I love it!
