I love a good cup of fruity, decaffeinated herbal tea with a sweet tea cookie. I wanted to share this gluten-free tea cookie recipe with you. Tea cookies aren’t amazing on their own because they are mild in flavor. They are meant to be dipped in tea or a good cup of hot chocolate.
10 Tbls. raw or organic butter
1/2 c. organic brown sugar
1 Tbls. herbal tea leaves (I used a chamomile lemon.)
1 cage-free, organic egg
1 3/4 c. Bob’s Red Mill Flour
1 tsp. gluten-free almond extract
*Beat butter and sugar. Add almond extract then stir in tea leaves. Beat in egg then fold in gluten-free flour. Form into a log then refrigerate 1 hr. or more. Cut into discs then bake at 375 degrees for 10-15 minutes.
