Soft & Chewy Molasses cookies~25 Days of Christmas Cookies #21

These gluten-free molasses cookies are so soft and chewy. They merry the molasses and best holiday spices so well. These yummy cookies just scream holidays. I love them!

3/4 c. organic brown sugar
3/4 c. raw or organic butter
1 cage-free, organic egg
3/4 c. molasses
2 3/4 c. Pamela’s Baking Mix (or other GF flour blend + 1 tsp. each xanthan gum & baking soda)
1/2 tsp. Real Salt
1 1/2 tsp. ground ginger
1 tsp. ground cinnamon
1 tsp. fresh ground nutmeg
1/2 tsp. ground allspice

*Preheat oven to 325 degrees. In a large bowl, cream together the brown sugar and butter until creamy. Beat in egg and molasses. Whisk together the dry ingredients in a medium bowl. Add the dry ingredients slowly to the butter mixture while mixing. Drop by spoonfuls onto prepared baking sheets. Bake 8-10 minutes or until set. Cookies shouldn’t brown. Cool.

  2. Amazing! I followed the recipe exactly, but in the middle of baking, added some big sugar crystals in the middle of the baking time. They turned out almost EXACTLY like Starbucks’ molasses cookies! I can’t wait for my Celiac hubby to come home for lunch and gobble them up. He’s missed those cookies SO much. Thank you!!!

  3. I made a dozen and they spread out and are really flat. Taste awesome though. So, I chilled them for a few hours, rolled into balls and coated with sugar and raised the oven temp to 360. Less flat. Going to chill them overnight and try a 375 oven. Any ideas how to fix that?
