I love these gluten-free snickerdoodles because they are so chewy! I am a huge fan of the cinnamon flavor in snickerdoodles. The flavor is so festive!
1 bag Pamela’s Gluten-Free Bread Mix (MINUS the yeast packet)
14 Tbls. raw or organic butter
1/2 c. agave OR 3/4 c. raw sugar
1/4 tsp. Real Salt
2 cage-free, organic eggs
1 1/2 tsp. gluten-free vanilla
1 tsp. fresh ground nutmeg
1 Tbls. ground cinnamon
extra cinnamon and raw sugar for rolling cookies in
Cream butter and sugar. Add eggs, vanilla, spices and salt and mix well. Slowly add bread mix.
Refrigerate for 1/2 hr. Roll a chunk of dough in your hands to make a ball, then roll in cinnamon and raw sugar mixture. Bake in preheated 350 degree oven for 10-13 minutes, or until edges start to brown.
