These gluten-free peanut butter and jam cookie sandwiches are a whimsical kind of yummy, taking you back to your childhood days of (gluten-free) peanut butter and jelly sandwiches. Your kiddos will love them!
8 oz. fresh ground peanut butter
6 Tbls. raw or organic butter
dash of Real Salt
1/3 c. raw sugar
1/3 c. brown sugar
1 free-range, organic egg
1 1/4 c. Bob’s Red Mill Gluten-Free All-purpose Flour
1-1 1/2 c. jam of choice
*Preheat oven to 350 degrees. Beat peanut butter, Real Salt and butter until nice and creamy. Add sugars and egg, mix well. Slowly add in flour. Roll dough into balls then push down with a fork both vertically and horizontally. Bake 10-14 minutes or until cooked. When cooled add some jam and sandwich with another cookie on top.
