My favorite roll-out sugar cookies~25 Days of Christmas Cookies #23

These gluten-free roll-out sugar cookies are perfect for the holidays when you like to cut them into fun shapes. My family didn’t even know they were gluten-free at our last get together. They were gobbled right up!

1 bag Pamela’s Gluten-Free Bread Mix (MINUS the yeast packet)

14 Tbls. raw or organic butter 

1/2 c. agave OR 3/4 c. raw sugar

1/2 tsp. Real Salt

2 cage-free, organic eggs 

2 tsp. gluten-free vanilla
*Secret Ingredient: fresh ground nutmeg (about 1 tsp.) This adds a very holiday feel to these cookies that I just love!

Cream Cheese Frosting

8 oz. organic cream cheese (1 package), softened
1/4 cup organic or raw butter (one stick), softened
1/2 teaspoon gluten-free vanilla extract
1 1/4 cups powdered sugar, sifted

Mix and frost over cooled bars and cookies.

Cream butter and sugar. Add eggs, vanilla and salt and mix well. Slowly add bread mix.
Refrigerate for 1 hr. On a lightly gluten-free floured surface, roll out dough and cut into your favorite holiday shapes. Bake in preheated 350 degree oven for 10-13 minutes, or until edges start to brown. Frost with cream cheese or any other frosting.
