These gluten-free gingerbread men are quit the hit! They are perfect for decorating on Christmas Eve to put out for Santa. (Even Santa would love these yummy gluten-free cookies!) It’s fun to decorate them with whatever sweet candies you have lying around. Use Pamela’s White Frosting mix for a delicious frosting, the taste is amazing!
1 (19 oz.) bag Pamela’s Gluten-Free Bread Mix (minus the yeast packet)
1/3 c. raw or organic butter
1 free-range, organic egg
1 Tbls. raw or organic milk (if needed)
1/2 c. molasses (I like Fair Trade certified organic brand)
1/2 c. organic brown sugar
2 tsp. ground ginger
2 tsp. ground cinnamon
1/2 tsp. allspice
1/4 tsp. Real Salt
*Combine all dry ingredients in a bowl. In a large mixer cream butter and brown sugar. Add egg and molasses, mix well. Slowly add in dry ingredients while mixing. Add milk if too dry. Cover and refrigerate 1 hr. On a lightly gluten-free floured surface, rollout gingerbread and cut into men. Bake at 350 degrees for 12-15 minutes or until edges are browning.
