Want to feel like you are in Italy for the day? These gluten-free amaretti are great little almond flavored cookies. If you are like me and LOVE the flavor of almond, then you are going to be a big fan of these!
1 3/4 c. raw almonds
1 c. raw sugar
2 free-range, organic egg whites
1/2 -1 tsp. gluten-free almond extract
gluten-free all-purpose flour for dusting
*Preheat oven to 325 degrees. To remove skin off of almonds, place them in a pot of boiling water for 2 minutes. Drain then rub almonds in a towel. This will remove skins. Dry out almonds in the oven for 15 minutes or until dry but not brown. Let cool, then dust almonds with a little gluten-free flour. Food process almonds with 1/2 c. raw sugar. In a bowl, beat egg whites until soft peaks form. Slowly add 1/2 c. sugar and beat until stiff peaks form. Combine almonds, egg whites, and gluten-free almond extract. Put mixture into a piping bag. Pipe out little circle and let stand about 2 hrs. Then bake in 350 degree oven for 15 minutes or until golden brown. Enjoy with some hot cocoa!
