Thanksgiving Leftovers~Potato Cakes with Sour Cream Dressing

What do you do with leftover mashed potatoes??? The texture isn’t quite right to have them with gravy again, not to mention the gravy is jellied now and let’s face it, just not quite the same the next day. I will be posting meal ideas for all those Thanksgiving leftovers. You can find all of them in the recipe library under Thanksgiving leftovers as well.

Potato Cakes
leftover mashed potatoes
1 c. gluten free breadcrumbs
1 tsp. Real Salt
1/4 tsp. cayenne
1/4 tsp. paprika
coconut oil for frying

*Mold leftover mashed potatoes into little 1 inch thick discs. Combine remaining ingredients in a bowl. Press potato disc into breadcrumb mixture until the entire thing is covered. Fry in oil about 2 minutes on each side or until hot in the middle. Drizzle with sour cream dressing.

Sour cream dressing
1/2 c. organic sour cream
1 Tbls. raw or organic milk (only if the dressing is too thick)
1 chopped garlic clove
1 Tbls. lemon juice
1 Tbls. chives
1 tsp. parsley
1/4 tsp. of each Real salt, Real Onion Salt and pepper
