Thanksgiving Dinner~Perfect Potatoes (Mashed)

3 lbs. organic red potatoes (washed, SKIN ON!)
1 stick raw or organic butter (1/2 c.)
1/2 c. raw milk or organic cream or half and half
3 cloves of garlic, minced
Real Salt to taste
Black pepper to taste

*After the potatoes have been washed, place them in a pot and cover them with COLD water. DO NOT CUT the potatoes and make sure to LEAVE THE SKIN ON!!! This is what makes them taste so decadent. :) Also, boiling potatoes whole instead of cutting them up helps you retain as many vitamins and nutrients through the cooking process as possible, fun huh?! :) Boil the potatoes until a fork can be inserted to middle of the potato with little effort. (About 25 min.) Drain potatoes and immediately place in a large bowl with the butter. Using a mixer, break down potatoes and mix with the butter. When smoothed down a bit, add the cream, garlic, Real Salt and pepper. Continue mixing until the consistency you like is reached. Enjoy piping hot!
