I love this recipe. It is so fast and simple yet it tastes like a nice restaurant quality gluten free chicken parmesan. I like to pair it will some sort of green vegetable. It also goes great with gluten free pasta and red sauce.
2 free-range, organic, boneless, skinless chicken breasts
1 c. gluten free tortilla crumbs
1/2 c. fresh (that’s the key) parmesan
2 cage free, organic egg
2 Tbls. extra-virgin olive oil
1/4 tsp. cayenne
1/2 tsp. Real Garlic Salt
1/2 tsp. basil
1/2 tsp. oregeno
1/2 tsp. marjorom
1-2 c. gluten free spaghetti sauce of your choice
1/4 c. fresh parmesan for garnish
*Put the egg in a bowl and whisk it up. In another bowl, combine the tortilla crumbs with all the spices. Dip chicken in egg then tortilla crumb mix. Repeat. Eat oil in a pan. Place dipped chicken in pan with oil and cook about 4 minutes on each side, or until chicken is cooked through. When chicken is cooked, add spaghetti sauce to pan to warm it up. Plate one chicken breast with some sauce drizzled over and fresh parmesan on top. Enjoy nice and hot.
