Holiday Spiced Almonds

This recipe makes me want to sing, “Chestnuts Roasting on an Open Fire”. Just looking at the recipe makes my mouth water and I can begin to smell these aromatic nuts roasting in the oven. This yummy treat is especially fun to enjoy around the holidays, but anytime works just the same. 🙂 They are best served with hot cider or wassail!

5 c. whole, raw almonds
1 c. raw or Rapadura sugar
1/4 tsp. cinnamon
1/4 tsp. nutmeg
1/8 tsp. cloves
pinch of Real Salt
2 organic, farm fresh egg whites
1/2 c. raw or organic butter

Preheat oven to 325 degrees. Spread nuts on a large baking sheet (two may be used also). Bake 20 minutes, turning occasionally. In one bowl combine sugar, cinnamon, nutmeg, pinch of Real Salt and cloves. In another bowl beat egg whites until soft peaks form (about 2 minutes). Continue to beat the egg whites while adding sugar mixture. Beat until stiff peaks form (about another 2 minutes). Fold in the oven roasted nuts. Meanwhile on the baking sheet, melt butter in oven. Spread almonds over the melted butter. Bake 30 minutes making sure to turn every 10-12 minutes. If butter remains, cook a few minutes longer. No butter should remain on baking sheet. These are best eaten nice and warm but can also be enjoyed cold.
