Fried Food Friday!!! (on Sunday this week)

Famous Fried Chicken (gluten free of course)
(my hubby’s recipe. It took a lot of prodding to get permission to post, consider yourselves lucky :)

1 lb. free-range, organic chicken breast
Coconut oil (enough to submerge chicken in completely)
2 organic, free-range eggs
2 Tbls. raw or organic milk
1 cup Bob’s Red Mill gluten-free flour blend
1/2 cup gluten free oats
1 tsp. Cayenne
1 tsp. Real Salt
1/2 tsp. black pepper

*Combine eggs and milk in a bowl. In another bowl combine all dry ingredients. Cut chicken into strips. Dredge chicken in egg mixture then in flour mixture. Repeat. Place gently into hot cooking oil over medium heat and fry until golden brown, about 4-6 minutes. Enjoy with gluten free ranch dressing. MMM!!!
