Fried Food Friday!!!

We had an amazing fried dinner this Friday. One of my childhood favorites…deep fried zucchini sticks!!! Oh boy were they good! Of course they were gluten-free fried zucchini sticks, but you would never know. I used Pamela’s Baking Mix to create the batter (recipe follows). We also had some gluten-free pepperoni (and veggies on my half) pizza. I made the pizza crust using my absolute favorite, Namaste pizza crust kit. I then used my favorite pizza sauce, Muir Glen Organics. I finished off with Applegate Farms, my favorite brand of nitrate-free pepperoni. It was a great and greasy Friday night, you gotta love that every now and then!

Zucchini Sticks

1 c. Pamela’s Baking Mix (or any other gluten-free flour blend you like)
1 tsp. baking powder (ONLY if NOT using Pamela’s)
1/2 tsp. Real Salt
1 egg, lightly beaten
1 c. milk
2 tbsp. coconut oil (or another good quality oil)
1 lb. zucchini, cut into 3 or 4-inch sticks
Good quality oil for deep frying

*Mix ingredients. Wet zucchini sticks then pat down with a paper towel. Dip sticks in batter one at a time and fry in hot oil for 1-2 minutes. Flip and cook 1-2 more minutes. Watch carefully, it doesn’t take long at all. Enjoy hot, with gluten-free ranch dressing…MMM!!!
