Caramel Apple Cake

This is one gluten free caramel apple cake you don’t want to miss! (Here you go Miss Karalee 🙂

1 cup organic brown sugar
3/4 cup honey or agave
1 1/2 cups coconut oil
3 eggs
3 cups Pamela’s Baking Mix (or another gluten-free flour blend)
1 tsp. aluminum-free baking soda (ONLY if not using Pamela’s)
2 tsp. cinnamon
1 tsp. nutmeg
5 organic golden delicious apples slices into 1/2 inch slices
1 cup chopped pecans
2 tsp. vanilla
dash of Real Salt

4 Tbls. raw or organic butter
1/2 cup organic brown sugar
pinch of Real Salt
1/2 cup raw or organic heavy cream

*Pre-heat oven to 325 degrees. Grease a 9×13 inch baking pan. In a mixing bowl, beat together first 3 ingredients of cake until well combined. Add eggs one at a time. In another bowl, combine dry ingredients. Leave pecans and apples until last. Slowly combine dry ingredients into wet ingredients. Mix until well combined. Gently fold in pecans and apples. Pour in pan. Bake 50-65 minutes. In a saucepan combine butter and sugar. Cook 2 minutes. Add cream and boil for a minute more. Puncture holes into cake and pour glaze over top. Serve warm with real whipped cream or alone. Enjoy!

  4. All of these recipes sound AMAZING but this one sounds the absolute yummiest!! My FMIL can't have gluten; I might make this to take for Thanksgiving with the family.
