Greek Chicken

Since many Greek restaurants don’t offer many gluten-free choices I was determined to create a delicious gluten-free Greek meal. I LOVED this one, so did my hubby who can be picky about foreign food 🙂

4 Tbls. olive oil
1 lemon juiced
1 Tbls. garlic
1 Tbls. oregeno
1 tsp. thyme
2 free-range, organic chicken breasts

*Combine all ingredients and marinate 1 hr. or more. Grill or pan fry until cooked through. Serve with yogurt, cucumber sauce.

Yogurt Cucumber Sauce:

1 cucumber peeled and diced
1 lemon juiced
1 Tbls. garlic
1 1/2 c. plain organic yogurt
1 tsp. salt
1/4 tsp. pepper
1 1/2 Tbls. dill
pinch of cayenne

*Mix and serve chilled over chicken.
