Cheeseburger Soup

1/2 lb. ground beef
3/4 c. chopped onion
3/4 c. shredded carrots
3/4 c. diced celery
1 tsp. dried basil
1 tsp. dried parsley
4 Tbls. butter
3 c. gluten-free chicken broth
4 c. diced, peeled potatoes
1/4 c. brown rice flour or other gluten-free flour of choice
8 oz. organic or raw cheddar cheese
1 1/2 c. organic or raw milk
Real Salt & pepper to taste
1/4 c. sour cream

*Brown beef in large stock pot. Drain and set aside. In same pan, saute onions, carrots, celery, basil and parsley in 1 Tbls. butter until veggies are tender, about 10 minutes. Add broth, potatoes and beef. Bring to a boil. Reduce heat, cover and simmer for 10-12 minutes or until potatoes and carrots are tender. While that’s simmering, melt remaining butter in small skillet. Add GF flour; stir and cook 3-5 minutes or until bubbly. Add to soup; bring to boil. Cook and stir for 2 minutes. Reduce heat to low. Add cheese, milk, Real Salt and pepper. Stir and cook until cheese melts. Remove from heat and blend in sour cream. Serve hot! This is great, hearty meal you can enjoy on a cold day.
