4 c. boneless, skinless free-range organic chicken
1 1/2 c. snow peas
1 1/4 c. scallions
1 1/4 c. bean sprouts
1 can water chesnuts (drained)
1/3 c. diced celery
1/3 c. diced carrots
*Combine above ingredients.
1/4 c. coconut or olive oil
1/4 c. gluten-free soy sauce (tamari)
2 tsp. ginger
1 tsp. garlic
Real Salt and pepper to taste
*Whisk and pour over salad.
