Oaty Chicken Nuggets w/ Garlic dill fries (I love homemade fries!)


2-3 Free-range, organic, boneless/skinless chicken breasts
1/4 c. extra virgin olive oil or unrefined coconut oil
1 Tbls. Rosemary
1 tsp. Real Salt
1 tsp. pepper
1 1/2 C. gluten-free oats

*Cut chicken breasts into nuggets. Pour oil over chicken to coat. In another bowl combine Rosemary, Real Salt, pepper and oats. Generously coat chicken nuggets with oat mixture. Place on a baking sheet and bake at 350^ for about 35 minutes or until cooked through. Enjoy with your choice of gluten-free sauce or just on their own!

Garlic Dill Fries
2-3 russet potatoes
1/4 c. plus 2 Tbls. extra-virgin olive oil
1 Tbls. Dill
2 Tbls. fresh chopped garlic
1 tsp. Real Salt
1/2 tsp. pepper

*Cut potatoes into fries of the thickness you prefer. Place potatoes on a baking sheet making sure not to let them touch. Drizzle with 2 Tbls. extra-virgin olive oil, Real Salt and pepper. Bake in 400^ oven for 40 minutes or until desired crispiness. In a bowl combine remaining olive oil, garlic and dill. Pour over potatoes and serve hot! (These are the best!)
