Marinated Chicken, boiled lemon & green bean salad

1 lemon
1 tsp. Real Salt
1 1/4 lb. free-range, organic chicken breast (pounded down)
1 garlic clove (crushed)
2 Tbls. mint
2 Tbls. fresh lemon juice
2 Tbls. extra-virgin olive oil
1 tsp. Real Salt
1/2 tsp. pepper
1 lb. Fresh green beans (ends cut)
2 Tbls. extra-virgin olive oil
1 Tbls. honey or agave
pinch of Real Salt and pepper
1 Tbls. lemon juice
1 Tbls. lime juice
2 Tbls. thyme
1 garlic clove crushed

* Place lemon in a pot and cover with water. Add 1 tsp. Real Salt and boil for 50 minutes. Lemon will be very soft. While lemon is boiling combine chicken, garlic, mint, lemon juice & olive oil in a bag and marinate in fridge until lemon is done. Place fresh green beans in steamer and steam until you can easily cut with a fork but the color is still green (not brown). Take lemon out of water and cut in half. Scoop out insides and discard. Cut ends of lemon off and dice lemon rind very small. Use at least 1/2 the lemon rind but more if you prefer a stronger lemon flavor. Cut steamed green beans into 1 inch pieces. Grill marinated chicken 3-4 minutes on each side. Cut into chunks and combine with green beans & lemon rind. In another bowl, whisk garlic, honey, thyme, lemon and lime juice, olive oil, Real Salt and pepper. Pour over green bean & chicken salad.
