Halibut Kabobs

3 zucchini cut into chunks
3 Tbls. extra-virgin olive oil
grape tomatoes
Wild Halibut cut into chunks
1/3 c. extra-virgin olive oil
zest and juice of one lemon
Real Salt & pepper
fresh oregeno to taste

*Sautee zucchini in 3 Tbls. extra-virgin olive oil for about 3 minutes. In a large bowl, combine all marinate ingredients and add zucchini, tomatoes & halibut to it. Marinate at least 1 hr. in the refrigerator. Take out of fridge and let sit for about 10 minutes to bring temperature up. Skewer ingredients on soaked skewer sticks. (Soaking sticks helps eliminate fire when they go on the grill. It also helps the wood not break off into the food.) Grill until fish is no longer opaque color and is white all the way through. Enjoy!
