Chicken Pesto w/ Pistachios…mmmm!

2 free-range, organic chicken breasts
1 Tbls. coconut oil
handful of fresh basil leaves
1/4 c. chicken stock
1 Tbls. parsley
1 Tbls. mint
Real Salt and pepper
3 Tbls. Extra Virgin Olive Oil
1 garlic clove
1/4 c. pistachios
1/2 c. parmesan

*Fry chicken in coconut oil. While chicken is cooking, combine all ingredients but parmesan in a food processor. When all ingredients are made into a paste, pulse in the parmesan. Cool chicken then shred. Combine pistachio pesto over and serve warm or cold. I LOVE this recipe!!! It is so fresh and clean tasting!
