4 c. cauliflower florets
1 Tbls. real butter
1 Tbls. arrowroot
1 c. organic or raw milk
3/4 c. grated organic or raw sharp cheddar cheese (more for cheesier:)
pinch of each: black pepper, nutmeg, and cayenne (optional)
*Steam cauliflower to crisp tender, about 10 minutes. Meanwhile, melt butter over medium heat in a saucepan. Whisk in the arrowroot then slowly pour in milk. Stir constantly with whisk until sauce thickens. Add the cheese, and season to taste with spices. Pour sauce over cauliflower and serve immediately. You could use any gluten-free flour in place of arrowroot.
